Delish Black Bean Brownies
This is a great healthy version of a brownie, using black beans to replace flour. Great for the gluten free crowd and to sneak veggies into your kid's diet.
Servings 16 2 inch pieces
Ingredients
- 2 cups black beans canned (15 ounce can)
- 3 large eggs
- 3 tbsp. unsweetened applesauce
- 1/3 cup cocoa powder sifted
- 1 pinch salt
- 1 tsp. baking powder
- 1 tsp. vanilla extract
- 3/4 cup brown sugar
- 1 tsp. instant coffee optional
- 1/2 cup semi-sweet
Instructions
- Preheat oven to 350 F. Lightly grease an 8” x 8” square baking dish.
- Combine all ingredients except chocolate chips in a blender and blend until smooth.
- Pour mixture into prepared baking dish. Sprinkle chocolate chips evenly over the top of dish.
- Bake in preheated oven for 30 minutes or until top is dry and edges start to pull away from the sides of the pan.
