Easy Baked Potato Upgrade
These potatoes take baked potatoes to a new level. A little more work than just popping potatoes in the oven, but they take less time to cook and look great on the dinner table.

Ingredients
- 4 medium russet potatoes
- 3 tbsp. olive oil to coat
- 1 pinch salt
Instructions
- If you don't have the oven in use, preheat your oven to 350F. Scrub your potatoes and cut lengthwise. Lightly score the potato at a 45-degree angle across the cut side. Rotate the potato and score again.
- Coat the potatoes on both sides with olive oil. Sprinkle salt on the cut side or add your own favourite spices. We love smoked paprika.
- Place the potatoes cut side down on the oven rack. I place along the sides so I can be using the rest of the oven for the main course. Bake for 40 minutes or until the cut side has become golden brown.
