Clean a crab
  1. Remove the meat from a cooked crab
Prepare Sauce
  1. Quickly blanch the tarragon leaves in boiling water, then chop finely.
  2. In a small bowl, add the mayonnaise, mustard (more if you would like a spicier flavor).
  3. Add the anchovy paste, tarragon, capers, and gherkins. Season to taste.
  4. Mix in the crab.
  5. Press the crab into small ramekins for individual salads and garnish if desired.
