For the Love of Rhubarb

Rhubarb is one of my favourite vegetables. It is the first to harvest in the Spring and keeps on giving all summer long. It is also easy to grow and thanks to its huge popularity for over a hundred years, there are plenty of ways to enjoy it.

While rhubarb had enjoyed popularity for centuries, it jumped to cult status with the Victorians.  To commemorate Queen Victoria’s coronation, a new Victorian variety of rhubarb changed all things.  It was easy to grow, reliably robust and consistently sweet and tender which previous varieties lacked. Additionally, farmers discovered that forcing rhubarb in the dark guaranteed a sweeter crop

Rhubarb went into everything from muffins to cocktails, jam to pies, and is making a comeback.  Here are some of my favorites:
