Roasted Cauliflower Supreme

This is one of my favourite side dishes to serve to company. It is an unusual combination of pantry ingredients you likely have in the back of your cupboard. Frozen cauliflower works just as well as fresh. The joy of cauliflower is that you can roast frozen cauliflower just as easily as fresh.  I keep frozen on hand for making low carb mashed potatoes.

Roasted Cauliflower Supreme

Ingredients

  • 1 3/4 pounds cauliflower florets and stems, fresh or frozen
  • 2 tbsp. extra virgin olive oil
  • 1/2 tsp. salt plus more as needed
  • 1/3 cup nuts pine nuts, chopped almonds
  • 4 tbsp. unsalted butter
  • 2 tbsp. raisins dried
  • 1/2 tsp. nutmeg freshly grated
  • 3 tbsp. capers
  • 2 tbsp. parsley chopped

Instructions

  • Preheat oven to 425F. Toss together the cauliflower, oil, and salt on a rimmed baking sheet. Roast for 30 to 40 minutes or until you see dark edges on the cauliflower. Shake the pan halfway through to get all sides crisp.
  • While the cauliflower is roasting, rehydrate the raisins by adding boiling water for a few minutes and drain.
  • Next, toss your nuts in a small frying pan on medium heat until lightly toasted. Move the nuts to a side plate.
  • Keep the pan on the stove and add the butter and cook until the butter is brown which will take about 10 minutes.
  • Add the raisins and nutmeg to the browned butter in the pan.
  • When the cauliflower is done, pour the brown butter mixture, nuts and capers onto the baking sheet and toss to combine.
  • Scoop the mixture to your serving dish, and toss with parsley as you serve.
