Sugar Free Sea Glass Jello
This sea glass jello is great for summer outdoor picnics and parties. It is a handheld treat that will hold up outside. Make your own sugar-free condensed milk to make a guilt-free colourful treat. Your work of art is only limited by the colours in the jello rainbow.

Ingredients
- 4 boxes Jell-o sugar free
- 1 1/4 cup condensed milk, sugar free make your own recipe below
- 2 envelopes unflavoured gelatin
Instructions
- For each flavour, dissolve one box of jello in one cup of boiling water. Pour into a flat container (I use square Ziploc containers) and chill 4 hours until firm or overnight.
- After chilling your colored flavours, run a knife through them and cut them into small blocks.
- Carefully mix the blocks in a 9 x 13 glass pan, or large flat plastic container.
- In another bowl, sprinkle 2 envelopes unflavoured gelatin into 1/2 cup cold water. After the gelatin blooms, add 1 1/2 cup boiling water and dissolve. Add the condensed milk. Stir and cool.
- Pour cooled milk mixture over jello and chill overnight
- Slice into blocks or slices and serve.
Notes
Make this dessert your own. You can pick from 2 to 6 different colors and create your own color combinations. Less colors will leave you with a larger white border unless you double up on each color. The downside of using sugar free jello is that it that your color palate is more limited.

Thank Goodness for Sugar Free Condensed Milk
You can easily find low fat condensed milk at your grocer, but sadly it is hard to find sugar free condensed milk. No worries, just make your own.

Ingredients
- 2 cups heavy cream or coconut milk
- 2 tbsp. unsalted butter
- 1/3 cup stevia sweetener
Instructions
- The wider the base of your pan the faster the cream will evaporate so you can use a skillet if you wish. Place all your ingredients in the pan and put on medium heat.
- Bring the mixture to a boil, then reduce heat and simmer until reduced by nearly half. stir occassionally and do watch to ensure the mixture doesn't come back to the boil.
- This will take 15 to 20 minutes and should be thickened to coat a spoon. Pour the mixture into a medium jam jar which will be heat resistent. The condensed milk will It w thicken as it cools.
- Store in the fridge if you aren't using. It will be thick when you take it out, but dip the jar in hot water for a few minutes or microwave for 10 seconds to regain the pourable consistency.
Notes
You don't need the butter, but it does give a nice touch of butterscotch flavouring.
