Easy to Make Sea Glass Jell-O

Edwardians were crazy about jellied desserts. Our tastes have evolved but there is still a place for eye-catching desserts, like this easy dessert which looks like a work of art.

If you can boil water you should have no problem with this dessert. It is a handheld treat that will hold up outside. With a few adjustments, you can make this low fat and reduce the amount of sugar. Your work of art is only limited by the colours in the jello rainbow. At Christmas, I will pick green and red as the primary colours.

A little history of gelatin in the Edwardian era and a couple of versions of  Sea Glass Jello.

All About Gelatine

The Crawleys loved their jiggly desserts

Edwardians were bonkers for jiggly gelatin creations, and as you recall from S1 of Downton Abbey, Daisy and Mrs. Patmore prepared a few creations for the memorial service after the sinking of the Titanic. Remember the aspic creations your grandmother used to serve?  Julia Child even dedicated a whole chapter to gelatin creations in Mastering the Art of French Cooking.

Times and tastes have changed, but we can still delight in the look and cooling taste of jello any time of the year.

Ingredients

  • 4 boxes Jello-O sugar free
  • 1 can sweetened condensed milk low fat
  • 2 envelopes unflavoured gelatin

Instructions

  • For each flavour, dissolve one box of jello in one cup of boiling water. Pour into a flat container (I use square Ziploc containers) and chill 4 hours until firm or overnight.
  • After chilling your colored flavours, run a knife through them and cut them into small blocks.
  • Carefully mix the blocks in a 9 x 13 glass pan, or large flat plastic container.
  • In another bowl, sprinkle 2 envelopes unflavoured gelatin into 1/2 cup cold water. After the gelatin blooms, add 1 1/2 cup boiling water and dissolve. Add the can of condensed milk. Stir and cool.
  • Pour cooled milk mixture over jello and chill overnight
  • Slice into large or small blocks and serve.

Notes

Make this dessert your own.  You can pick from 2 to 6 different colors and create your own color combinations.  Less colors will leave you with a larger white border unless you double up on each color.  The downside of using sugar free jello is that it that your color palate is more limited.
