2 cups mashed potatoes
½ cup unbleached all purpose flour
½ tsp. salt
1 tbsp. unsalted melted butter

Mix the ingredients, turn out onto a floured surface and knead lightly. Use a floured rolling pin to flatten into circle 8 inch x ½ inch thick. Use a floured knife to cut into quarters, and dust lightly with flour.
Heat a heavy griddle with some vegetable oil or butter, and cook farls over amedium-high heat, about threeminutes a side until evenly browned.
