This dish is thrift dressed up as luxury, an idea the Edwardian kitchens would have understood. The after: a sweet-hot sauce that makes fried chicken, sausages, or grilled cheese sing, and uses up berries past their best.

1 1/2cups225 g strawberries, hulled slightly soft ones are perfect)
1 to 2mediumred chilieschopped (seeds out for milder heat)
1/3cup80 ml cider vinegar
2tbsp.sugar or honey
1/2tsp.salt
1smallgarlic clove

Instructions
Put everything in a small pan and bring to a gentle simmer.
Cook for 10 to 12 minutes, until the strawberries collapse and the chilies soften.
Blend until smooth. Add a splash of water if it is too thick.
Cool and store in a clean jar in the fridge for up to two weeks.

Serving note: built for fried chicken, but try it on a grilled cheese sandwich. You will not look back.
