8cupszucchinipeeled, seeded and sliced
2/3cuplemon juice
1cupsugar
2tspcinnamon
1/2tspfreshly grated nutmeg
1/2cupFlour
1/2cuprolled oats
1/2cupbrown sugar
1/4cupwalnutsfinely chopped
1/4tspcinnamon
1/2cupbuttercold
4Tbsp butter – melted

Instructions
Add the zucchini to a large pot and mix the lemon juice in. Cook on medium heat until they turn opaque. They now look like apple slices.
Add sugar, cinnamon, and nutmeg to the mixture. Simmer for another 2 minutes. You can now place the filling in a greased 8 x 8 baking dish.
In a mixing bowl, combine flour, oats, brown sugar, nuts, and cinnamon together. Cut the cold butter into the mixture with a pastry blender or your fingers until you get a crumbly consistency.
Add the crumble topping on top of the filling and bake in a 375° for 30-35 minutes.
