Mrs. Beeton was the original domestic goddess who wrote the definitive cookbooks for Victorian homemakers.

Her recipe for rice soup is very simple, but the dish does have a place of distinction as it was served in steerage on the ill-fated voyage of Titanic.

Ingredients
  

  • 4 oz. rice
  • 1 pinch salt
  • 1 pinch cayenne
  • 1 pinch mace
  • 2 quarts chicken stock

Instructions
 

  • Throw the rice into boiling water, and let it remain 5 minutes, then pour it into a sieve and allow it to drain well.
  • Now add it to the stock which has been set to boiling, and allow it to stew till it is quite tender;
  • Season to taste and sprinkle on toppings, like chopped coriander, Serve quickly.
