This recipe for baked cheesy eggs comes from Clarence House and is one of King Charles favourite breakfast dishes. While his mother, Queen Elizabeth, was a big fan of chocolate, King Charles is a big fan of cheese and eggs. I look forward to more royal dishes with those two ingredients.
Don’t worry if you can’t get hold of a particular type of cheese for this recipe, as King Charles says the dish can be made using various types.
King Charles Favourite Cheesy Baked Eggs
His mother Queen Elizabeth loved chocolate, Charles is a egg and cheese man.
Ingredients
- 1/2 cup wilted spinach
- 1 large cherry tomato or sundried tomatoes
- 1/2 cup strong soft cheese e.g. Tunworth, Golden Cenarth or other strong soft cheese
- 1 large egg
- 1/3 cup heavy cream
- 1 tbsp. grated hard cheese e.g. Old Winchester
- Fresh basil leaves - torn
Instructions
- Butter a small ovenproof dish and line with wilted spinach, making a small well in the centre. Place the cherry tomato (quartered) or the sundried tomato (chopped) on top of the spinach.
- Dot the soft cheese around the dish amongst the tomatoes. Add the torn basil leaves and the optional charcuterie. Season with salt and pepper.
- Crack the egg into the centre of the spinach.
- Pour the double cream over the egg - avoid breaking the yolk. Sprinkle with grated hard cheese.
- Place in a hot oven (180C) for 8-10 minutes. Let it stand for a few minutes before eating.
