Ingredients
  

  • 8 cups zucchini peeled, seeded and sliced
  • 2/3 cup lemon juice
  • 1 cup sugar
  • 2 tsp cinnamon
  • 1/2 tsp freshly grated nutmeg
  • 1/2 cup Flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup walnuts finely chopped
  • 1/4 tsp cinnamon
  • 1/2 cup butter cold
  • 4 Tbsp butter – melted

Instructions
 

  • Add the zucchini to a large pot and mix the lemon juice in. Cook on medium heat until they turn opaque. They now look like apple slices.
  • Add sugar, cinnamon, and nutmeg to the mixture. Simmer for another 2 minutes. You can now place the filling in a greased 8 x 8 baking dish.
  • In a mixing bowl, combine flour, oats, brown sugar, nuts, and cinnamon together. Cut the cold butter into the mixture with a pastry blender or your fingers until you get a crumbly consistency.
  • Add the crumble topping on top of the filling and bake in a 375° for 30-35 minutes.
