When life gives you zucchini, make zucchini crumble which tastes just like apple.
Ingredients
- 8 cups zucchini peeled, seeded and sliced
- 2/3 cup lemon juice
- 1 cup sugar
- 2 tsp cinnamon
- 1/2 tsp freshly grated nutmeg
- 1/2 cup Flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/4 cup walnuts finely chopped
- 1/4 tsp cinnamon
- 1/2 cup butter cold
- 4 Tbsp butter – melted
Instructions
- Add the zucchini to a large pot and mix the lemon juice in. Cook on medium heat until they turn opaque. They now look like apple slices.
- Add sugar, cinnamon, and nutmeg to the mixture. Simmer for another 2 minutes. You can now place the filling in a greased 8 x 8 baking dish.
- In a mixing bowl, combine flour, oats, brown sugar, nuts, and cinnamon together. Cut the cold butter into the mixture with a pastry blender or your fingers until you get a crumbly consistency.
- Add the crumble topping on top of the filling and bake in a 375° for 30-35 minutes.
