This is a great vegetarian option which is not the same old baked beans, and a way to get non-lentil lovers to get a taste of lentil goodness.

Easy Baked Lentil Side Dish

This is a great lentil dish for those who don't like lentils.

Ingredients
  

  • 2 tbsp. olive oil
  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 cup green lentils
  • 1 cup red lentils
  • 3 cups chicken stock
  • 2/3 cup ketchup
  • 1/2 cup brown sugar
  • 2 tbsp. mustard
  • 1 tsp. cracked black pepper
  • 1 tsp. celery salt
  • 1/2 tsp ground mustard
  • 1/2 tsp. cumin
  • 1/4 tsp. chili pepper
  • 1/2 pound cooked bacon crumbled optional

Instructions
 

  • Preheat your oven to 350F.
  • Heat olive oil in an oven-safe pan. Saute the onions about 4-5 minutes. Add the garlic and cook for another 2-3 minutes. Stir in the lentils and chicken stock and simmer for 15 minutes.
  • Stir the ketchup, brown sugar, mustard, and spices into the lentils. Transfer the skillet to the grill or oven and cook for an hour, stirring occasionally.
  • When the liquid is absorbed and the lentils are soft you are done. Add in bacon at the end if you wish. .
