This is a great healthy version of a brownie, using black beans to replace flour. Great for the gluten free crowd and to sneak veggies into your kids’ diet.

Ingredients
  

  • 2 cups black beans canned (15 ounce can)
  • 3 large eggs
  • 3 tbsp. unsweetened applesauce
  • 1/3 cup cocoa powder sifted
  • 1 pinch salt
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract
  • 3/4 cup brown sugar
  • 1 tsp. instant coffee optional
  • 1/2 cup semi-sweet

Instructions
 

  • Preheat oven to 350 F. Lightly grease an 8” x 8” square baking dish.
  • Combine all ingredients except chocolate chips in a blender and blend until smooth.
  • Pour mixture into prepared baking dish. Sprinkle chocolate chips evenly over the top of dish.
  • Bake in preheated oven for 30 minutes or until top is dry and edges start to pull away from the sides of the pan.
